Celebrating Summer's Bounty

Tonight I celebrated summer by creating a yummy dinner with all my goodies from the farmer's market today. Roast chicken over a bed of summer succotach (baby rainbow heirloom tomatoes, trio of purple, red and yukon potatoes, summer squash, pancetta, fresh shucked corn, pickled fennel & basil in an apple citrus dijon vinaigrette)
